5-Minute Blueberry Coconut Frozen Yoghurt Carly Flynn / Monday, March 16, 2015 / Categories: Kitchen Healthy frozen yoghurt? Yep, it really exists! And all you need is four key ingredients and five minutes to create this guilt-free, decadent treat. INGREDIENTS 4 cups frozen blueberries 3 tablespoons agave nectar or honey 1/2 cup coconut-flavored yogurt 1 tablespoon fresh lemon juice 3/4 cup sweetened flaked coconut (optional) DIRECTIONS Add the blueberries, honey, yogurt and lemon juice into a food processor and process the ingredients for 5 minutes until smooth After the ingredients have blended together, adjust the sweetness or tartness of the frozen yogurt by adding an additional squeeze of agave nectar or fresh lemon juice Serve the frozen yogurt immediately topped with toasted coconut for added crunch (recipe follows), or store in an airtight container in the freezer until ready to serve Optional Topping: Preheat oven to 175°C Line an oven baking tray with parchment paper, then spread the flaked coconut in an even layer.
